Cinnamon Sugar Donut Muffins


I'm a little behind the blogosphere when it comes to these muffins. I don't know why I waited so long to try them. I love donuts. I love muffins. I mean, what's not to love about either? These muffins are incredibly simple to make. Unadorned, they taste similar to a plain yeast donut, with that slight hint of nutmeg. Once they are rolled in the cinnamon sugar, they just melt in your mouth. I couldn't eat just one. Luckily, I had help eating them, or I would've probably finished the entire dozen myself.



Cinnamon Sugar Donut Muffins
Adapted from Baking Bites


¾ c sugar
1 large egg
1 ½ c all purpose flour
2 tsp baking powder
¼ tsp salt
¼ tsp ground nutmeg
¼ c vegetable oil
¾ c milk
1 tsp vanilla

3 Tbs sugar
1 tsp cinnamon


Preheat oven to 350˚F. Lightly coat a muffin tin with non-stick spray. In a large bowl, beat together the sugar and egg until light in color. In a small bowl, stir together the flour, baking powder, salt, and nutmeg. Pour dry mixture into the egg mixture and stir to combine. Add vegetable oil, milk, and vanilla, stirring until just combined.

Divide batter evenly into muffin tin, filling each cup about 2/3 full. Bake until a toothpick inserted into the center of a muffin comes clean, about 15-18 minutes. Let cool for 10 minutes, then remove muffins from tin. In a small bowl, combine sugar and cinnamon. While the muffins are still warm, roll each one in the mixture, coating all sides with the cinnamon sugar.

  13. What a coincidence! I just made these Duffins (yes, I combined donut and muffins) two days ago, and I got the recipe from the same site. They were delicious, they didn't taste exactly like donuts, but they were still very tasty! Hope you enjoyed them as much as I did!

  18. We made these tonight and they are delicious! Very easy to make. I doubled the recipe to make 24 muffins and substituted cinnamon for the nutmeg b/c I was out of nutmeg. It turned out great.

  20. These are really good--absolutely have the texture of a doughnut. I would imagine you could also dip them in chocolate (Chocolate frosted donut muffin anyone?)

    They were also super easy to make and didn't take very long at all.

    I'll absolutely make these again.

  22. So excited! I was looking for a quick, but special breakfast to make for my kids before school this morning. These were so easy, I was able to pull the batter together even before the oven was finished preheating. I even had time to have a quiet cup of coffee before the kids woke up. Thank you!
